Carimanolas are a delicious Panamanian/Colombian type of fritter made with spiced meat, cheese and yuca. Good carimanolas are so mouth waveringly delicious that for my friends and family in Panama, they are a necessary stop at a roadside eatery on the way to the beach. It just wouldn’t be a perfect day at the beach without them. I usually hate fried food and I love them. I was looking for an authentic recipe and found this wonderful blog on Colombian cuisine which has a recipe I can’t wait to try out if I can find yuca to make them with.
